If you have a simple kitchen, and the cabinets are in good shape, and you don't want the expense of ripping everything out, then why not treat your cabinets to some fun jewelry? (ie: hardware such as knobs and drawer pulls)
Take a day, and really look at your kitchen. What don't you like about it. Is your counter full of clutter? Does the mail get plopped on the end of the counter and stay there? Do things tend to stay on the counter because the kitchen cupboards are too full?

When tackling a kitchen remodel, sometimes, you can make the biggest difference, just by re-arranging your storage, by going through your cupboards and throwing out things that have not been used in the last year. Clear off your counter, and clean out the drawers.
Now that you have a clean slate, head to the hardware store, and look at storage ideas, such as racks that fit under shelves, and under sink storage ideas. These are not expensive and can really streamline clutter.

Next take a look at the kitchen cupboard hardware, and see if there is anything you like. Be careful, as you can spend anywhere from a dollar to thirty dollars per piece. Base it on your cabinet style. If you have traditional oak or dark wood cabinets, why not go for a metal look, or a brushed bronze type thing. This will give richness to the cabinets. But if you have painted style cabinets, or you plan to paint your cabinets, then take a look at the "unfinished" wooden knobs. These are really inexpensive, and you can finish them anyway you wish. These can be miniature works of art! You could decoupage things to them, or simply paint them a plain color, and don't forget to use varnish for protection.

Once you get your supplies home, and setup better storage, and put things back in the cabinets, trying to keep as much clutter off the counter as possible. Give your counter, sink and faucet a good clean, change out your kitchen cupboard hardware and you will feel like you have a new kitchen!

If you have a spare few dollars, why not add a decorative rug in front of the sink, and some fresh new linens, such as tea towels etc.. or maybe a nice blind for the window. Just little changes like that can have a huge impact. If you also painted the walls a fresh color it would feel like a new kitchen without the expense of ripping out the cabinets.
